
Just yesterday, I raved about the Portland Farmer's Market and shared a few of my great finds. Later in the afternoon, I continued "re-discovering" more things that I bought in my wonder-induced buying frenzy and quickly forgot about.
Now that I've tasted it, I can't even believe that I forgot about this find for a second. In the hordes of fresh-made cheese available I snagged the last carton of a delicious, delicate mascarpone. Without any binders or thickeners, its naturally sweet and light and as the seller described it "just dissapears on your tongue". It truly is like nothing I've ever had before.
After searching through a variety of delicious sounding recipes on my favorite food sites, I knew that while they sounded great I just couldn't do anything too complicated with this cheese. Instead, my friend and I saw some beautiful fresh strawberries at the store and decided that it would pair perfectly with this creamy deliciousness. Not content to just serve this dessert with the plain mascarpone, I decided to also add a little honey and vanilla to the mix as well. The result is a delightfully creamy and light spring dessert that highlights the delicious cheese and the fresh strawberries.
I also love that this simple combination fits with the Spring Fruit Sensations monthly mingle hosted over at www.eattherightstuff.com. It is a great showcase of the strawberries that are just coming into the Farmer's Markets near me in Northern California (when I'm not visiting Portland). And while this may not technically be a "recipe" it is certainly a spring fruit sensation that I hope you'll get the chance to taste and enjoy.
Strawberries with Honey Vanilla Mascarpone
Serves 4
1 medium carton strawberries, rinsed
1 1/4 cups mascarpone (fresh is best if you can find it)
3 tbsp. honey
1 tbsp. vanilla extract
Combine honey and vanilla in a microwave safe bowl. Heat together for 45 seconds. Stir to combine. (This can also be done in a saucepan on the stove if you prefer.)
Whisk honey mixture into mascarpone in a medium bowl until smooth and creamy.
Serve mascarpone mixture in a dipping bowl next to fresh, whole strawberries.

Wow that looks incredibly delicious. I wonder if that combination would go well as the filling on a layered cake.
